If raw is how you like it best, then this vegan restaurant is the place for you: almost everything is served raw. There are only organic ingredients, like fresh water chestnuts, snow peas, yellow beets, lotus root and ita-wakama (dried seaweed). Drink sake instead of beer, in one of the varieties available. The woolly, fringe-of-society image is gone. Modern with dark red trim, filled with closely packed, sophisticated tables made of dark wood. Book a week in advance! It is filled with fun thirtysomethings, who are happy to shell out $25 for the special corn, jicama and cilantro empanadas or zucchini-tomato lasagne. Have a European-sized appetiser and main dish. A farm-raised duck hangs on the wall, and the duck on the business card is a living witness to the fact. America as the land of fast food? This place invented slow cooking.Address
