Behind a theatrical red curtain lies a Zen-like, serenely modern room with a wall of illuminated water bottles and a ceiling of rippling white fabric. Have an aperitif at the glass bar downstairs, where people enjoy being seen. Chef Masaharu Morimoto’s menu is Japanese with a dash of international inspiration. The fish is flown in from Japan three times a week. The presentation of the sushi is highly creative and colourful. Try the Spicy King Crab appetizer with aioli and cilantro. Recommended main dish: the Lobster Epice with lemon cream and the Ishiyaki buri bop with yellowtail on rice, cooked at your table in a hot stone bowl. This is sake-lovers’ heaven, featuring a wide range of such interesting flavours as toasty graham aromas and sweet chilli pepper finish. The restaurant also serves aged sake; its oldest bottles date back to 1972. The hypermodern toilets alone are worth a visit, complete with heated toilet seats and bidet.
